果糖基轉移酶(Fructosyltransferase, EC 2.4.1.9)，也稱b-呋喃果糖苷酶(b- Fructo-furanosidase, EC 2.4.1.26)，為一種水解酶，具有轉移活力及廣泛的受體活性，能以蔗糖為原料，合成蔗果三糖等低聚糖。蔗果低聚糖又稱為低聚果糖（FOS），是一種優良的食品配料，具有益生元生理功效。低聚果糖主要為蔗果二糖，還含有蔗果三糖和蔗果四糖。

Sucrose fruit oligosaccharides, also known as fructooligosaccharides (Fos) , is an excellent food ingredient with prebiotic physiological effects. Fructooligosaccharides are mainly sucrose disaccharides, but also contain sucrose trisaccharide and sucrose trisaccharide.
