Tannase, also called Tannase, is a kind of tannin acyl hydrolase, which is prepared by submerged fermentation and refining. The enzyme can hydrolyze the ester and polyphenol carboxyl bonds in gallic acid tannins, and is widely used in tea extraction and fruit juice industry.
